    Spring: el restaurante de Las Cañitas que redefine la cocina vegetariana

    En una zona donde abundan las propuestas gastronómicas, Spring logró encontrar su propio lugar. No es solo un restaurante vegetariano: detrás de cada plato hay una historia familiar, una filosofía de vida y una forma de entender la alimentación. Ubicado en Báez 260, Las Cañitas, el restaurante está atendido por sus propios dueños. En Spring hay una familia que lleva más de veinte años difundiendo la cocina vegetariana en Buenos Aires. La propuesta nació en Palermo y hoy funciona en Las Cañitas. En la cocina está el padre de Noelia, mientras que ella se encarga de transmitir una filosofía que combina alimentación, bienestar y respeto por los animales. “Muchos creen que ser vegetariano es comer lechuga y tomate”, dice Noelia entre risas. Basta mirar el buffet para comprobar que el prejuicio está bastante lejos de la realidad.

    Visitamos Spring un sábado, cuando ofrecen su popular tenedor libre, ideal para probar un poco de todo. Hay decenas y decenas de opciones: ensaladas, sushi (muchas variedades), tofu, hongos, arrolladitos, dumplings y platos calientes que demuestran que la cocina vegetariana puede ser tan variada como sabrosa. Pero Spring no habla únicamente de alimentación saludable. Para la familia, el vegetarianismo también está ligado al respeto por los animales y a una filosofía cruelty free que forma parte de su vida cotidiana. Noelia es vegetariana desde que nació y suele remarcar algo que todavía genera dudas en muchas personas: una alimentación basada en vegetales puede ser completa, equilibrada y nutritiva.

    Entre todo lo que probamos, las sopas merecen una mención especial. La de calabaza fue una de las favoritas de la jornada: cremosa, reconfortante y perfecta para un día frío. La de jengibre, en cambio, aporta ese calorcito que parece hacer bien desde el primer sorbo. Revitaliza. Y para quienes creen que van a extrañar la carne, hay un plato que merece una mención especial: la Melena de León a la plancha; tiene una textura sorprendente. Fue una de las grandes revelaciones de la visita. También destacan opciones como el Ramen Umami Vegano, el Ramen Curry, los dumplings y distintas preparaciones de inspiración oriental que reflejan las raíces familiares del proyecto. Los postres tampoco se quedan atrás y van variando. Entre ellos aparece una delicada crème brûlée, frutas de estación, tortas, flan, budín y mucho más.

    Durante la semana, Spring funciona a la carta, con una oferta igual de amplia y precios accesibles. Además, cuentan con servicio de take away, muy elegido por quienes ya incorporaron el lugar a su rutina. Lo que distingue a Spring no es solamente la comida. Es la sensación de entrar a un espacio donde todo tiene una explicación y una intención. La atención cercana, el ambiente relajado y el compromiso de la familia se sienten en cada detalle.

    Spring: The Las Cañitas Restaurant Redefining Vegetarian Cuisine

    In an area packed with dining options, Spring has managed to carve out a place of its own. It is not simply a vegetarian restaurant: behind every dish is a family story, a philosophy of life, and a different way of understanding food. Located at Báez 260 in Las Cañitas, the restaurant is run by its owners. Spring is part of a family that has spent more than twenty years promoting vegetarian cuisine in Buenos Aires. The project began in Palermo and is now based in Las Cañitas. Noelia’s father runs the kitchen, while she focuses on sharing a philosophy that brings together food, well-being, and respect for animals. “Many people think being vegetarian means eating lettuce and tomatoes,” Noelia says with a laugh. One look at the buffet is enough to prove that this stereotype is far from reality.

    We visited Spring on a Saturday, when they offer their popular all-you-can-eat buffet, making it the perfect opportunity to try a little bit of everything. There are dozens of options: salads, sushi in many varieties, tofu, mushrooms, spring rolls, dumplings, and hot dishes that show just how diverse—and delicious—vegetarian cuisine can be.

    But Spring is about more than healthy eating. For the family, vegetarianism is also closely connected to respect for animals and a cruelty-free philosophy that is part of their everyday life. Noelia has been vegetarian since birth and often points out something that still raises questions for many people: a plant-based diet can be complete, balanced, and nutritious. Among everything we tried, the soups deserve a special mention. The pumpkin soup was one of the favorites of the day: creamy, comforting, and perfect for a cold day. The ginger soup, on the other hand, brings a warmth that seems to do you good from the very first sip. Revitalizing, almost instantly.
    And for anyone who thinks they will miss meat, there is one dish that deserves special attention: the grilled Lion’s Mane mushroom. Its texture is surprisingly meaty and distinctive, making it one of the great discoveries of our visit.

    Other highlights include the Vegan Umami Ramen, Curry Ramen, dumplings, and a variety of Asian-inspired dishes that reflect the family roots behind the project. Dessert is no afterthought either, with the selection changing regularly. Among the options are a delicate crème brûlée, seasonal fruit, cakes, flan, bread pudding, and more. During the week, Spring operates à la carte, with an equally wide selection and accessible prices. They also offer takeout, a popular option among customers who have already made Spring part of their routine. What sets Spring apart is not just the food. It is the feeling of stepping into a place where everything has a story and a purpose. The warm service, relaxed atmosphere, and the family’s commitment can be felt in every detail.
